I'm seriously. A bunch of fresh spinach. Baked in a pot of poppy seeds and the most beautiful cheese you will ever see. That's all you want and more, and it's full of vegetables. This is NOT skipped.


Who needs a bowl of poppy seeds and extra powdered cheese? ME! And you. Must be you.


Secret time? I never had cream spinach growing up. My mother and grandmother had never done anything like this - in fact, I only did it in my 20s. I clearly avoided it like the plague if it was offered to me beforehand. My veggie dislike was not on the list, and even the creamy spinach that looked like silk bechamel was out of bounds.


The only thing that makes me eat spinach is when it's topped with hot bacon sauce.


But soft spinach? Under any circumstances! I feel like I have completely missed the comfortable platters of food and have avoided them for most of my life.


No longer! I'm here to buy some soft spinach. I even put it on your mac and cheese.

  • 1 kg of thin paste, prepared according to package directions
  • 4 tablespoons unsalted butter
  • 1 sweet onion, diced
  • 3 garlic cloves, chopped
  • A pinch of salt and pepper
  • 4 tablespoons of flour
  • ¼ teaspoon of freshly ground nutmeg
  • 12 ounces of fresh baby spinach
  • 2 1/2 cups milk
  • 12 ounces of fountain cheese, freshly shredded
  • 6 ounces of white cheddar cheese, freshly grated
  • 2 ounces of parmesan, freshly grated
  • ½ Cup of crunchy onions or breadcrumbs for sprinkling

  1. Preheat oven to 350 degrees F.
  2. Preheat a large, oven-proof pan over medium heat and add the butter. Mix the onions and garlic with a pinch of salt and pepper. Cook, stirring frequently, until the onions are tender.
  3. At this point you can prepare the pasta in different pans. You can prepare it in advance - just add a little olive oil to keep it from sticking.
  4. Put all the grated cheese together.
  5. Stir the flour into the onions to make a wrinkle. Cook for 2 to 3 minutes until golden brown and fragrant with nuts. Pour the milk slowly while continuing to stir. The mixture will start to pool and thicken. Stir in nutmeg.
  6. Add spinach - you'll find it flashy at first, but the spinach will cook quickly! Stir until everything is cooked and soft.
  7. Once the spinach is done, mix almost all of the cheese (except for a little for topping) and the pasta. Keep throwing them together until they come together.
  8. Sprinkle with remaining grated cheese. Crispy onions on top. Bake for 35 to 30 minutes, until golden and bubbly.
