Ingredients

  • 3 cups elbow macaroni or mini penne
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 1 cup Miracle whisk or mayonnaise
  • 2 tablespoons mustard
  • 1/4 teaspoon garlic powder
  • 1 teaspoon of salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons of sugar
  • 6 hard boiled eggs
  • Paprika for garnish optional

Instructions

  1. Fill a large pot with water and bring to a boil. Add 3 cups of macaroni or mini penne. Cook for 10 minutes.
  2. Drain the macaroni or mini penne in a colander and rinse with very cold water.
  3. Dice the carrots, celery and onion. The onion should be finely chopped. You want flavor, but not big chunks.
  4. In a large mixing bowl, combine the Miracle Whip or mayonnaise, mustard, garlic powder, salt, black pepper and sugar.
  5. Add the carrot, celery and onion to the large mixing bowl and stir.
  6. Peel the boiled eggs. Carefully cut two and set aside. Chop the remaining four eggs and add to the mixing bowl.
  7. Pour the macaroni or mini penne into the mixing bowl and stir until the macaroni is well coated.
  8. Transfer the macaroni salad to a serving dish.
  9. Place sliced ​​eggs on top and sprinkle with paprika if desired.
  10. Cover and refrigerate until ready to serve. Enjoy!
