Hey everybody! It’s Alaina from Bullock’s Buzz and I’m happy to come back with another delicious recipe! Are you ready to try some of the best blueberry muffins you've ever eaten? These muffins are tender, moist and absolutely filled with fresh blueberries overflowing with sweetness!

What do you need:

Ingredients

  • 3/4 cup sugar
  • 1/2 cup softened butter
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 c. 1 tsp baking powder
  • 1/2 cup milk
  • 2 cups washed, dried and picked blueberries
  • 3 c. 1 tsp sugar to garnish
  • 1/4 tsp. 1 tsp cinnamon for garnish

Instructions

  1. Preheat oven to 375 degrees F. Grease a standard 12-cup muffin pan or line with cupcake pans.
  2. Using a hand mixer and medium bowl, or a stand mixer, cream together the butter and sugar.
  3. Add eggs, one at a time, making sure to beat well after each addition. Then add the vanilla.
  4. In another bowl, sift together the flour, baking powder and salt. Then slowly add the dry mixture to the creamy mixture, alternating with the milk.
  5. Mash 1/2 cup blueberries with a fork and mix them into the batter.
  6. Make sure the remaining whole blueberries are completely dry, then mix them with a little flour. Then gently fold them into the muffin batter.
  7. Fill each muffin pan with batter. Sprinkle with 3 tsp. 1 tsp sugar combined with 1/4 tsp. Cinnamon on top of the muffin batter.
  8. Bake at 375 degrees for about 30 to 35 minutes.
  9. Remove from oven, then remove each muffin from pan and let cool for at least 30 minutes on a cooling rack.
