Poffertjes Easy Dutch Mini Pancake Recipe
During the summer holidays, my children harassed me to prepare poffertjes for them. And since I was making them anyway, I thought it would be a good idea to share this fun and super simple recipe with you.
Mini Dutch pancakes
These fluffy little pancakes are delicious when served with a knob of butter and a pinch of icing sugar.
Ingredients
- 1 cup buckwheat flour
- 1 cup plain all-purpose flour
- 3 tablespoons warm milk
- 1 beaten egg
- 3.5 teaspoons dry yeast
- 1 teaspoon of salt
- 1/3 cup melted butter
- icing sugar for serving
- Butter for serving
Instructions
- In a small cup, mix the dried active yeast with a little hot milk and set aside.
- Take a large bowl and sift together plain flour and buckwheat flour. Make a well in the center of the flour and pour in the yeast mixture, the egg and the rest of the warm milk.
- Whisk the ingredients until you get a smooth paste without lumps.
- Cover the mixture with a clean cloth and set aside in a warm place for about an hour and let the mixture rise.
- Use melted butter to grease the poffertjes pan (or the hotplate / pan) and let it heat over medium heat.
- Once the pan is hot enough, fill each notch with the dough.
- Let the dough cook until it boils and one side has turned brown, then turn them over and let them brown on the other side (if they stick, wait a few more moments).
- Transfer to a plate and serve with a small piece of butter and icing sugar.
Remarks
* Tips * You will have to work very quickly, so it is best to start with a few at the beginning to understand the cooking time and perfect your turning technique. Make sure to re-grease the pan before each cycle of poffertjes.
