This delicious lasagna-stuffed chicken recipe will turn into a chicken dinner that your family repeatedly asks for!
Ingredients
For the chicken
- 4 thin chicken breasts no thicker than 1/4 inch
- 1 cup seasoned Italian breadcrumbs
- 1/4 cup parmesan
- 1 beaten egg
- 1 1/2 cups marinara sauce
For the lasagna garnish
- 1/2 cup grated provolone or mozzarella or a mixture of both
- 3/4 cup ricotta cheese
- 1/4 cup parmesan
- 1 tablespoon chopped fresh basil
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 beaten egg
Instructions
- Preheat the oven to 375 degrees. Pour the sauce into the bottom of an ovenproof pan or casserole dish.
- Set up a chicken dredging station, with a shallow bowl of egg and one of the Parmesan and breadcrumbs. Pass the chicken through the egg, shaking the excess, then through the breadcrumb mixture, making sure to coat both sides. Reserve the chicken.
- Combine the lasagna netting ingredients in a small mixing bowl. Divide the filling evenly among the four pieces of chicken. Place the filling in the center of each chicken breast. Roll the chicken by folding one end under the other.
- Place the seam down in the sauce. Bake 30 to 35 minutes or until chicken is cooked through. If the cheese runs out, push it back before it cools down. It will settle while cooling. Let sit for 5 to 10 minutes to allow the ricotta mixture to settle.
