With just 4 ingredients, this grated beef recipe for easy slow cooker tacos couldn't be easier. Just add your favorite toppings for a delicious weekday dinner!
Ingredients
- 2.5 to 3 pound round roast beef
- 1 to 10 oz. box of hot red enchilada sauce
- 3/4 cup chopped onion
- 1 oz 1/3 cup taco seasoning packet
Instructions
- Lightly coat the interior of a slow cooker with cooking spray.
- Cut the fat from the roast and place it in the bottom of the slow cooker.
- Pour the can of enchilada sauce over the roast beef.
- Add the chopped onion and sprinkle with taco seasoning.
- Cover and cook on high for four hours or on low for 8 hours.
- Shred the beef with two forks.
- Serve on tortillas with lettuce, tomato and cheese. Enjoy!
