Today's recipe is perfect for hot days. However, it is also so delicious and full of nutrition that it is excellent any time of the year.
Acai Berry Bowls were introduced to me and my husband during our recent summer vacation in Montana. My sister took us in a nice food truck that served them, and I was hooked on the first bite!
Since then, I have researched and discovered that acai berries (pronounced ah-sigh-EE) are found in Central and South America. Research shows that they are richer in antioxidants than cranberries, blueberries and strawberries.
Currently, they can only be purchased in the form of frozen mash or powder. So the bowl of acai berries - built with an acai berry smoothie as a base - is a very popular way to introduce it into our diet.
Ingredients
- 1 serving of frozen unsweetened acai berry pulp package
- 1 frozen banana
- 1 cup frozen berries such as blueberries
- 1/2 - 3/4 cup ice water
- garnishes such as fresh sliced granola strawberries, mango and bananas
Instructions
- Place the frozen acai berry pulp, frozen berries and frozen banana in a blender.
- Gradually add ice water until it becomes thick and smooth.
- Divide the smoothie into bowls into portions.
- Garnish with "stripes" of toppings such as granola, fresh sliced strawberries, mangoes and bananas.
