We are a big family and try not to eat often. If you follow my HyperHypoMama blog, then you know when it comes to quick and easy meals, I'm everywhere. Sesame chicken stir-fry is one of my favorite dishes of all time! I do it without fail at least once a week. It only takes about 20 minutes and I can do it in large batches without ruining the flavor.
A quick and easy weekday meal that is full of flavor that you will love!
Ingredients
- 2 lb thinly sliced chicken thighs
- 2 medium carrots, sliced
- 1 sliced green pepper
- 2 cups broccoli
- 1 medium onion, sliced
- 1/3 cup brown sugar
- 1 tablespoon oyster sauce
- 1/3 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon garlic paste with chili
- 3 cloves of chopped garlic
- 1/4 teaspoon sesame seeds
Instructions
- Heat the sesame oil in a pan over high heat. When hot, sauté the garlic and chili paste until they are fragrant. Add the onion and sesame seeds, sauté until lightly browned.
- Add the rice vinegar to the pan and quickly scrape the bottom of the pan. The vinegar evaporates.
- Add the chicken, carrots, pepper and broccoli. Continue to cook over high heat until the chicken is cooked for about 10 to 15 minutes. Do not cover as this will produce too much liquid.
- Stir in soy sauce, oyster sauce and brown sugar. Cook for another 5 minutes until the sauce begins to thicken.
- Serve over rice and garnish with more sesame seeds.
